Texas Sheet Cake

I finally have a dessert post up! Sorry it’s been a while since the last dessert post, guys. This pregnancy has been crazy!

I pretty much only crave pizza.

If I popped out a ninja turtle in July, I probably wouldn’t be that surprised.

Well… I mean, I’d be a little bit surprised because, ya know… It’s a turtle. But it’s probably because I couldn’t resist giving it all the pizza.

Pregnancy cravings are like normal cravings except for your mouth is on fire and your body is on fire and everything is just on fire until you quench that craving. Anyone that doesn’t think pregnancy cravings are a thing are either: A) men B) women who have never been pregnant, or C) pregnancy unicorns.

Ah… the dreaded pregnancy unicorn. You love ’em. You hate ’em. You wish you could be ’em. I am definitely not a pregnancy unicorn. If I had to describe myself as anything, I’d probably be a pregnancy manatee.

I just googled manatees, and in the FIRST SENTENCE it said they are also known as, “sea cows.” Seriously. Google it.

Sigh… Why am I not surprised?

This is a Pioneer Woman recipe and she claims that it is the best Texas Sheet Cake ever… and I’d probably have to agree with her.

It is moist, and chocolatey, and best part of all is that it can feed a big crowd and everyone loves it. The frosting is so good you could probably just eat it on it’s own.

… But we won’t because that would be weird…

Eh hehm.

Anyway, I made two of these sheet cakes for my Cub Scout Blue and Gold Banquet yesterday. I made one with pecans in the frosting and one without. I prefer the one with nuts, but the one without was also pretty popular.

They definitely fed the masses, and I may or may not have caught a couple scouts digging into one with THEIR BARE HANDS.

That’s how you know it’s good. They couldn’t even wait to put it on a plate and eat it with silverware. They just HAD to have it, and they HAD to have it like, NOW.

I get it boys. I get it.

Now where’s the pizza?

FOR THE CAKE

  1. 2 cups all purpose flour

  2. 2 cups sugar

  3. 1/4 teaspoon salt

  4. 4 tablespoons (heaping) cocoa

  5. 1 cup butter

  6. 1 cup boiling water

  7. 1/2 cup buttermilk

  8. 2 large eggs, slightly beaten

  9. 1 teaspoon baking soda

  10. 1 teaspoon vanilla

FOR the FROSTING

  1. 1/2 cup pecans, finely chopped

  2. 3/4 cup plus 2 tablespoons butter

  3. 4 tablespoons (heaping) cocoa

  4. 6 tablespoons milk

  5. 1 teaspoon vanilla

  6. 1 pound (minus 1/2 Cup) powdered sugar

Instructions

  1. In the bowl of an electric mixer, combine flour, sugar, and salt.

  2. In a medium saucepan, melt butter over medium high heat. Add cocoa and whisk together until combined. Add boiling water and allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and mix until just combined.

  3. In a small bowl, pour in buttermilk, beaten eggs, baking soda, and vanilla. Stir buttermilk mixture into chocolate mixture until completely combined. Pour onto lightly greased cookie sheet and bake at 350° F for 20 minutes.

For the Frosting

  1. While the cake is baking, make the frosting. Chop pecans while melting butter in a saucepan. Add cocoa to saucepan once the butter is melted. Stir to combine, then turn off heat. Add the milk, vanilla, and powdered sugar and stir together. Add the pecans, stir well and pour over warm cake. Enjoy immediately!
