Red Velvet Sandwich Cookies


I’m not going to lie to you. I’ve never been a huge fan of red velvet anything.

Red velvet brownies, red velvet cookies, not even that red velvet cheesecake that everyone was going crazy about from the Cheesecake Factory.

It might be all in my head, but I just know the amount of food coloring that goes in there and I feel like that’s all I can taste.

Everyone always tells me “It’s just chocolate!”

So… why don’t you just eat regular chocolate then?

But I’ve done it. I’ve made a red velvet cookie that I actually like.




It might be the massive amounts of cream cheese frosting… You all know of my undying love for cream cheese frosting already, but I really think I’ve got something here.

I use the same recipe as my chocolate sandwich cookies, but I added in a little extra cocoa and of course, red food coloring.

Let’s all go look at the pictures of my chocolate sandwich cookies and laugh and laugh. It’s nice to see I’ve made some improvements with my photography.

These puppies, much likes their pure chocolate counterparts, are soft and chocolatey and oh so delicious.

Soft cookies are my jam.

These are the first red velvet cookies I've ever had that actually taste like chocolate instead of food coloring!

Ingredients

  1. 2 Devil’s Food cake mixes

  2. 4 eggs, slightly beaten

  3. ⅔ cup oil

  4. 2 Tablespoons unsweetened cocoa powder

  5. 1 oz. red food coloring

Instructions

  1. Preheat oven to 350° F.

  2. Mix cake mixes, eggs and oil. In a separate small bowl, combine cocoa powder and red food coloring until a paste is formed. Add to cookie dough and mix until just combined. Scoop out 1” balls and drop on un-greased cookie sheets. Bake for 8-10 minutes or until slight indentation remains when lightly touched. Cool.

  3. Make a batch of cream cheese frosting and spread in-between two cookies.
