Are we all recovering nicely from our sugar hangovers?

I kind of wish sugar hangovers were a thing because then maybe it would slow Baby Girl down for an hour or two. She is like a freaking cyclone.

And remember how I complained about the stupid Easter grass we are all forced to put in our baskets if we want to be accomplished parents?

IT. IS. EVERYWHERE.

ALREADY!

How does that even happen?

I spent yesterday moping because we spent the weekend in bright and shiny Mesquite with our family and it was so fun and warm and there was so much sugar and then I came back home to real life where my house is never clean and I have to do the dishes alone.

Baby Girl is almost 2 1/2. She should know how to do the dishes by now.

Oh how I love Famous Julie’s Polish pottery, and this ravioli, and the days before Easter Grass wasn’t plaguing my home.

I’ll probably get it all finally cleaned up just in time for Christmas where my fake Christmas tree thistles will take their turn permeating my home.

Okay. Let’s talk ravioli.

Specifically this inside out ravioli, because (I assume) it’s easier than making real ravioli. I don’t know though, I’ve never tried my hand at making ravioli, but I’m just going to go ahead and assume this is easier because it is SO EASY.

And you know it’s going to be good because cheese.

An easy and comforting weeknight meal packed with protein and studded with spinach hidden underneath melty cheese of course.

For the Noodles

  1. 16 oz. uncooked pasta (large shells)

  2. 1 (10 oz.) package frozen chopped spinach

  3. 1/2 cup bread crumbs

  4. 2 eggs, beaten

  5. 1/4 cup olive oil

  6. 1 cup mozzarella cheese

  7. 8 oz. ricotta cheese

For the Meat Topping

  1. 2 lbs. ground beef

  2. 1/2 cup onion, chopped

  3. 4 cloves garlic, minced

  4. 2 (8 oz.) cans tomato sauce

  5. 1 (6 oz.) can tomato paste

  6. 1 (16 oz.) jar spaghetti sauce (any brand will do)

Instructions

  1. Preheat oven to 350° F.

For the Noodles

  1. Cook pasta according to package directions. Add spinach during last 3 minutes of cooking time.

  2. Drain pasta and spinach well, and in a large bowl, combine with bread crumbs, eggs, oil and cheeses. Spread evenly into lightly greased 9x13 pan.

For the Meat Topping

  1. While the pasta is cooking, brown ground beef with onion and garlic.

  2. Stir in both cans of tomato sauce, can of tomato paste and jar of spaghetti sauce. Bring to a simmer and allow it to continue to simmer for 10 minutes, stirring occasionally.

  3. Pour meat mixture on top of noodle mixture in 9x13 pan and bake for 30 minutes, until completely heated through.
