Happy Valentine’s Day!




There is nothing that says, “I love you” more than copious amounts of chocolate with more chocolate smeared in-between.

Especially at my house because we are praying if we consume enough that it will put us into a chocolate coma and is there anything better than a nap? No. The answer to that questions is a resounding NO. So for Valentine’s this year, that’s all I’m wishing for.

I’m a pretty simple girl. I mean, I wouldn’t say no to diamonds, but when would I wear them?

So until that is possible, I’m all about the chocolate and the sleeping. Unless someone is in the market for a car. I wouldn’t say no to that either… Just FYI.

For Valentine’s this year I’m spending the day with both of my loves, cleaning out the garage and fixing our guest bathroom’s toilet. We are REALLY romantic around here.

Seriously though, look at this baby girl. I would be happy doing about anything if she was around.





I may or may not have given her one of these cookies and she may or may not have learned how to eat cookies from me.

Also, she maybe kind of probably did touch my camera lens with those chocolatey fingers.




Yeah, that totally happened.

Back to these cookies, because they are AMAZING. You need to make these ASAP. Like, right NOW.




Homemade Oreos with Brownie Batter Filling

These super soft and chocolatey cookies are decadent... but then you sandwich them with brownie batter and they become insane!

For the Chocolate Cake Mix Cookies

  1. 1 box devil's food cake mix (I like Pillsbury mixes for these cookies)

  2. 2 eggs

  3. 1/3 cup oil

  4. 2 teaspoons vanilla extract

For the Brownie Batter Filling

  1. 3/4 cup butter, room temperature

  2. 1/2 cup brownie mix, dry from the box

  3. 1/4 cup cocoa powder, unsweetened

  4. 1 pinch salt

  5. 2 teaspoons vanilla extract

  6. 2 tablespoons milk

  7. 1-2 cups powdered sugar

For the Cake Mix Cookies

  1. Preheat oven to 350° F and line cookie sheets with parchment paper.

  2. Pour all the cookie ingredients into a large bowl and stir until smooth. The dough will be thick.

  3. Roll dough into balls about the size of a golf ball or smaller and place on prepared cookie sheets. Gently press down the dough to flatten them out just a little bit. Bake for 6-8 minutes and let cool.

For the Brownie Batter Filling

  1. Beat butter, brownie mix, cocoa powder, salt, vanilla extract and milk together until smooth. Slowly add in powdered sugar a little at a time until you reach your desired consistency. Taste. If it's not sweet enough for your liking, add more powdered sugar (and milk if it gets too stiff). Frost your cookies and sandwich two together to make your sandwich cookies.

  2. Will keep in a tupperware container for several days... if they make it that long.
