Grilled Pineapple

OOOHHH MMMYYYY GOOOOOOOSSSSHHHHH. This recipe. I can’t handle it.

I love so many things about this summer. I love that I’m not pregnant and I don’t feel like I’m surrounded by fire and brimstone at every waking hour of the day. I love that we have our own house.

I love that Baby Girl is old enough to love swimming and being outside.

I love that the weather is beautiful pretty much all of the time.

I love that we have our own grill and that we use it almost on the daily.

Although, I grew up in a family where we used the grill all year-round.

Famous Julie would strap on a pair of snow boots and go trudging through feet of snow outside to grill us a delicious dinner in the middle of winter.

She’s super hardcore like that… but basically what I’m saying is that last declaration is pretty much null and void at this point in my life because I’m used to grilled food all the time.

It’s probably why I love my mom so much.

Speaking of fire and brimstone…

I will warn you, these are dripping in butter and a little PSA: BUTTER IS SUPER FLAMMABLE.

I’m sure you knew that already, but I didn’t want anyone reading this blog to make this recipe and singe off their eyebrows later.

I love your eyebrows.

I think they are beautiful just the way they are.

Please don’t burn them off making this delicious pineapple.

Ingredients

  1. 1 fresh pineapple, cut into 1/2 inch slices

  2. 1/2 cup butter, melted

  3. 1/2 cup brown sugar, packed

  4. 1/2 teaspoon cinnamon

Instructions

  1. In a small bowl combine the butter, brown sugar and cinnamon and whisk to combine. Lightly brush one side of the the pineapple with half the butter mixture. Grill, turning once and basting again with the remaining butter mixture. Grill until tender and golden about 3-5 minutes on each side.

Although, I’d probably take this pineapple over a nice pair of eyebrows anyway.

It’s that good.
