French Onion Grilled Cheese with Bacon

Famous Julie gave me a panini press/griddle and I’ve been turning out grilled cheese sandwiches like it’s my job.

This variation is one that I have been wanting to try for a while now.

I have always been a fan of French Onion Soup and a fan of grilled cheese sandwiches.

The thought of combining them made my heart go pitter patter and all heart eyes emoji.

PLUS BACON.

I try to put bacon on as many things as humanly possible.

Bacon covered bacon. So simple it’s genius.

Anyway, the sweet onions are caramelized and then soaked in a beef stock mixture then everything gets smothered in smoky, stringy, gruyere cheese and sandwiched between two buttery, crispy, thick pieces of french bread.

Yeah. That’s happening right now.

I had always been told that the way to a man’s heart is through his stomach.

When I met Mr. T I definitely tried to put that into action.

I invited him over to my house to “study” one night … just kidding. We really did study. I was kind of a nerd.

There were definitely worse study partners to glance at over your stack of index cards, though.

ANYWAY, I thought I would make him a bomb grilled cheese sandwich and it would be so good that he would fall desperately in love with me and we’d get married and have tons of little babies all named T-names and we would live happily ever after.

My posterity hinged on my ability to make an unbelievably good grilled cheese sandwich. I just knew it.

I softened the butter, cut the bread, grabbed the cheese (two slices of course) and babied that little sandwich until it was perfectly golden brown on both sides and the cheese was beautifully melted.

I handed it to my prospective husband with pride knowing that I had totally nailed that sandwich. There’s no way he wasn’t going to love me after making that for him.

I watched him take that first bite expecting to see his eyes light up. Instead he scrunched his eyebrows, looked up at me and slowly reached up to his mouth to grab the piece of parchment paper he had just chewed out of his sandwich. The double cheese slice had failed me. I had totally spaced the piece of parchment paper sandwiched in between every slice of packaged cheese.

My world was shattered. I watched in horror as my future crumbled around me.

He slid the paper out from between his lips, finished chewing his bite and said “This is good! Maybe next time I’ll take mine without the paper, though.”

Ingredients

  1. 3 tablespoons butter

  2. 2 sweet onions, sliced

  3. Pinch of thyme

  4. Pinch of flour

  5. 2 tablespoons sherry

  6. 1 tablespoon Worcestershire sauce

  7. 1/3 cup concentrated beef stock

  8. Pepper, to taste

  9. 3/4 - 1 cup Gruyere cheese, shredded

  10. 1/2 lb. bacon, cooked

  11. French bread, sliced

  12. Unsalted butter

Instructions

  1. In a medium sized pan melt 3 tablespoons of butter over medium/low heat. Cook your sliced onions in the butter, stirring to coat them. Cook your onions until they are deep brown and nicely caramelized only stirring as often as is necessary to avoid burning or sticking. This should take about a half hour.

  2. Sprinkle the onions with a little bit of thyme and flour stirring well. Add sherry, Worcestershire, beef stock and pepper and continue to cook until the mixture has reduced and soaked into the onions.

  3. Butter your bread and stack with caramelized onions, shredded Gruyere cheese and bacon strips. Top with another piece of buttered bread and fry both sides in pan over medium heat until golden brown and cheese has melted. Serve immediately!
