I’m going to give you one more reason to love rainy days.
It’s simple.
It’s healthy.
It’s delicious.
It’s all of my favorite things wrapped into one incredible dish.
Today I found out I need new boots.
Why? Because it was raining cats and dogs.
When did I discover this you ask?
When I was hauling thousands of pounds of groceries up several flights of stairs to my apartment. And a baby. And my dog was running away. And I was getting really mad because I had actually done my hair for once. And washed my car.
I apologize, Santa Rosa. I’m obviously the reason it’s raining today.
BUT… I have to admit. I actually adore rainy days because I get to stay in and cuddle my baby and eat delicious things like this chili.

A quick one pot meal that can be thrown together on a rainy day. Using turkey and lots of vegetables, it is the healthiest chili option there is!

Ingredients
1 lb. ground turkey
1 large onion, chopped
2-3 cloves garlic, minced or chopped
1 quart diced tomatoes
4 cups chicken broth
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
1 can olives, chopped
1 tablespoon cumin
Salt and pepper to taste
Instructions
In a large pot or dutch oven, brown turkey with onion and garlic over medium heat. Add remaining ingredients and bring to a boil. Easy peasy!
