Summer is for s’mores, and swimming, and bonfires, and {having babies} and more s’mores.
GUYS. I’M HAVING ANOTHER BABY IN NINE DAYS.
… and Mama doesn’t drink wine, so she’s going to have to go to town on a plate of s’mores brownies.
I’m going to have two kids. We are going to be a family of four. I’m freaking out.
Somebody out there in the big wide internet world tell me that I’m going to be okay. That I can do it. That I already know how to survive without sleep. Because ready or not… here she comes!
I’ll probably never bake again.
Goodbye sweet blog. It’s been a blast. ‘Til we meet again once my kids leave for college.

Thick graham cracker crust… even thicker brownie layer… toasty marshmallows littering the top. Give me SOME MO, give me some mo.
Warning: These are CRAZY RICH so a little goes a long way.
So basically, don’t be bummed that you only get an 9×9 pan’s worth because it is PLENTAY.
I’m sure it’s crazy for everyone else that it’s already halfway through July basically. For me, it’s been the longest summer of my life, but I can’t wait any longer to meet my newest little love!
I’m praying she will decide to grace us with her presence this week.

These Deep Dish S'mores Brownies are gooey and decadent. Everything a s'more should be!

For the Graham Cracker Crust
2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons butter, melted
Pinch of salt
For the Brownies
2 cups semi-sweet chocolate chips
1 cup butter
1/2 cup packed brown sugar
1 1/2 cups granulated sugar
4 eggs
2 teaspoons vanilla
2 1/2 cups all-purpose flour
1/4 teaspoon kosher salt
Mini Marshmallows
For the Graham Cracker Crust
Preheat oven to 350° F and prepare a 9x9 pan by lining it with parchment paper for easy removal of the cooked brownies.
Mix together all four ingredients until the graham cracker crumbs are moist, and press into the bottom of the prepared 9x9 pan.
For the Brownies
In a large bowl, melt chocolate and butter over a double boiler (or in the microwave) and mix until smooth. Add brown sugar, sugar, eggs, vanilla and salt and mix until smooth. Mix flour into chocolate mixture until just barely combined.
Pour over graham cracker rust and bake for 40-45 minutes. Cool completely.
Right before serving, top with mini marshmallows and place under broiler in oven. Watch closely as they can go from beautifully golden brown to burnt very quickly! (Before this step I would definitely remove them from the 9x9 pan and discard the parchment paper because I wouldn't want your parchment paper to catch on fire!)
