Happy St. Patrick’s Day, my friends!
St. Patrick’s Day has this weird way of making me want to eat a lot of green stuff.
But not like, good for me green stuff like vegetables and salads. But, bad for me green stuff like Key Lime Pie (check this one out!!) and these Mint Chocolate Cookies.
It also coerces me to turn foods that shouldn’t be green, green. Like eggs? Eggs should NOT be green. But… but… I wanna!! My toddler would freak out if her eggs were green!
But then, of course, she would probably insist that they be green for the foreseeable future and refuse to eat anything but.
So I’m gonna take a beat and decide if it’s really worth it to do that to myself.
Like, one day (seriously I don’t know what Mr. T was thinking. Probably about being the coolest dad ever and what not) Mr. T asked Baby Girl if she wanted a sandwich. THEN he asked her if she wanted it cut into squares (cool), triangles (alright), or a FREAKING CIRCLE.
Which one do you think she picked? And then insisted on for the next TWO MONTHS?
Yeah. My life was this crap show of circular peanut butter and jelly sandwiches and cut off crusts.
Then, as if the gods had heard my cries, one day she just magically stopped asking for it to be cut into a circle. In fact, she asked for it not to be cut at all. And I didn’t even have to sacrifice a goat or anything. Miracles still happen to this day, people.
If you add together all the time I spent cutting sandwiches into circles, I probably spent a total of 30 minutes of my life doing that crap.
That’s 30 minutes I’ll never get back. I could have been mindlessly scrolling through Facebook or Pinterest, but NOOOO… I was cutting a sandwich into a circle.
Oh! I mean, staring into Baby Girlfriend’s eyes or giving of my time to charity. Eh hehm. That’s what I meant.
Anyway… let’s talk about these cookies. This is another Cutler’s recipe that they so graciously put on their website for all to steal use.
The last Cutler’s Cookie recipe I tried was so ridiculously good that I wanted to try them all, and I though these would be darling to ring in St. Patrick’s Day, because green.

Cutler's Mint Chocolate Cookies are delish and so awesome for St. Patrick's Day!

For the Cookies
1 cup salted butter, softened
1 2/3 cup granulated sugar
2 large eggs
1 1/4 teaspoon vanilla
3/4 cup unsweetened cocoa
1/4 teaspoon kosher salt
1 1/4 teaspoon baking powder
2 1/3 cups cake flour
For the mint frosting
1/2 cup salted butter, softened
3 cups powdered sugar
1 to 3 tablespoons milk
1/2 teaspoon mint extract
Green food coloring
For the chocolate frosting
1 cup salted butter, softened
4-5 cups powdered sugar
Milk
1/2 cup unsweetened cocoa
1 teaspoon vanilla
Kosher salt, to taste
For the Cookies
Add butter and sugar to the bowl of an electric mixer. Beat together in medium/high speed until light (about 2-3 minutes). Add eggs and vanilla and mix until fluffy (about 3-5 minutes). Add dry ingredients and mix just until incorporated (30 seconds - 1 minute).
Pour dough onto a VERY lightly floured surface and roll out to 1/2 inch thick. Cut with round cookie cutters and place on a baking sheet lined with parchment paper or a silpat baking mat. Bake at 350° for 10 minutes.
For the mint frosting
Using am electric mixer or hand mixer, mix butter and powdered sugar together. Add 1 tablespoon of milk at a time until you get a smooth consistency. Add mint extract and 3-4 drops of green food coloring and mix until thoroughly combined.
For the chocolate frosting
Using an electric mixer or hand mixer, beat together butter, powdered sugar and cocoa. Add the vanilla and 1 tablespoon of milk at a time while mixing until you get a good spreading consistency.
To assemble cookies
Spread cooled cookies with 1 tablespoon of mint frosting. After about 15 minutes spread with chocolate frosting on top of mint frosting.
