Holy crap you guys.

I may never bake normal cookies again*.

These were crazy easy, crazy fast and CRAZY gooey!

Gooey cookies make my heart go all pitter patter.

Sorry I’ve only been catching you guys once or twice per week lately. Nesting has hit, and it has hit HARD.

There have been power tools involved.

Nesting has spilled from the nursery into Baby Girl’s room and out into the remainder of my home. Mr. T has been busy running crazy after the cyclone that is me. Poor guy.

I have yet to send him on midnight runs for crazy food cravings, but I think he’d take that over the construction zone that we lovingly call home.

Hopefully we’ll clear out the yellow caution tape and orange cones before Baby arrives.

If you have never tried a cookie bar before, ya’ll need to get ON IT.

After baking as many cookies as I have, I have found some of the best habits to get into when making cookies also make it impossible to bake cookies quickly.

For example: One of the best things I have found to keep my cookies fluffy and gooey and not flat and dry is to refrigerate the dough for a good couple of hours.

When you make bars though, you can just throw it in a 9×13 and bake it immediately. It cuts the time by hours and you still get thick, gooey, delicious cookies.

So if you need good cookies and you need good cookies like NOW, press that dough into a 9×13 (Assuming you aren’t like me and eat half of the batch before it ever even gets baked) and bake away.

Ingredients

  1. 1 cup butter, softened

  2. 1 1/4 cup packed brown sugar

  3. 1/2 cup granulated sugar

  4. 2 large eggs

  5. 3 teaspoons vanilla

  6. 2 tablespoons milk

  7. 1 teaspoon baking soda

  8. 1 teaspoon baking powder

  9. 1/2 teaspoon kosher salt

  10. 2 1/4 cups flour

  11. 2 1/2 cups old fashioned oats

  12. 1 heaping cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375° F.

  2. To the bowl of an electric mixer add butter and sugar and beat until creamy. Add eggs, vanilla and milk and mix on high speed until light and fluffy. Scrape the sides of the bowl and add the baking soda, baking powder, salt and flour. Mix just until combined (about thirty seconds). Mix in oats and chocolate chips until thoroughly mixed throughout the dough.

  3. Prepare a 9x13 pan by spraying it with non-stick cooking spray or lining with parchment paper. Press dough into pan (at this point you can dump more chocolate chips over top like I did... or be a responsible human being and don't. Whatever.) and bake in the preheated oven for 25-30 minutes.
