Butter Toffee Cookies


Yesterday was my big brother, Skylor’s birthday.

So Sky, I made these birthday cookies in your honor so you could like, look at them?

I wish you could taste them because they. were. GOOOOOOOOOOD.

I also wish I didn’t live so far away because I totally would have brought you some, but it’s the thought that counts right?



Sky and I have had a lot of good times together in the 22 years we’ve both been in existence.


For example… here’s a picture of us riding an elephant together in Nepal.

If that doesn’t look like a good time, then you’ve obviously never ridden an elephant before.

These are some of my favorite cookies. They have chocolate, toffee and nuts. You'll love them!

These are some of my favorite cookies. They are chock full of toffee, chocolate AND nuts... they are out of this world!

Ingredients

  1. 3/4 cup butter, softened

  2. 1 1/4 cup packed brown sugar

  3. 2 teaspoons vanilla

  4. 1 teaspoon salt

  5. 1 teaspoon baking soda

  6. 1 large egg

  7. 2 1/4 cup flour

  8. 1 cup toffee bits

  9. 1 cup chocolate chips

  10. 1 cup chopped pecans

Instructions

  1. Cream butter, sugar, vanilla, salt and baking soda together. Add eggs and beat until fluffy about 3-5 minutes. Add flour and beat just until combined. Stir in bits, chips and nuts. Cover with plastic wrap and refrigerate for at least 2 hours.

  2. Drop by generous spoonful (I use my 3 tablespoon cookie scoop) on a cookie sheet lined with parchment paper or a silpat baking mat. Bake at 375° for 8-10 minutes. Cool on sheet for 5-10 minutes before removing to cooling rack.

Notes

  1. *I usually ALWAYS bake my cookies for the least amount of time possible. They usually look a little under-baked when I pull them out but they will continue to bake on the cookie sheet and will stay SUPER soft when you store them in an airtight container.
