Scones are one of my favorite foods.
I have a lot of favorite foods, and every single one of them is equally terrible for my health.
But SO good for my spirit.
I should probably clarify, though…
UTAH scones are one of my favorite foods.
Not the scones that are served with coffee at coffee shops that are baked with fruit in them sometimes, and are reasonably okay for your heart.
I’m talking about the ones that are deep fried in oil, then covered in butter and honey and sugar and clog up your arteries with every single delicious bite.
HMMM…. yeah… That’s the stuff.
Sometimes people like to smother them in beef and beans and lettuce and pico and call it, “Indian Fry Bread” but I’ll take the one covered in honey butter over that any day.
If you’ve never experienced the magic that is a “Utah Scone”, do yourself a huge favor and run to the kitchen right now.
Unlike their baked counterparts, these delicious drops of dough are fried and smothered in honey, butter and cinnamon.

1 tablespoon active dry yeast
3/4 cup luke-warm water
1/4 cup sugar
1/4 butter, melted
1 1/2 teaspoons salt
1/2 teaspoon baking soda
1 large egg, slightly beaten
2 1/2 cups all-purpose flour
Canola oil for frying
Dissolve yeast in warm water. Let stand for about 10 minutes or until frothy.
In the bowl of a stand mixer with your dough hook attached mix the sugar, butter, salt, baking soda, egg and yeast mixture together. Add flour while mixing, until the dough stops sticking to the sides and bottom of the bowl. It should still stick to your fingers when you touch it, though.
Transfer the dough to a greased bowl and turn to grease the top. Place the bowl in a warm place, draft free place and cover it with a clean towel. Let rise for one hour or until doubled in size.
After the dough has risen, sprinkle a work surface with flour. Punch the dough down and roll it to about 1/4" thick. Cut the dough into rectangles and allow to raise a second time, while your oil heats up.
In a large pan, heat 2-3 inches of canola oil over medium/high heat until it reaches 350°F. Once hot, add dough a few pieces at a time and cook until golden brown on one side and then flip to the other side to cook. Repeat until all the dough has been fried. Serve immediately smeared all over with my hardcore honey butter.
