Strawberry Ice Cream

The other day, Baby Girl walked up to me and said, “Momma. I want pink ice cream, PWEEEEEEAASSEE.”

So we made the crap out of some pink ice cream.

Here’s the deal, people… as long as she can’t pronounce her r’s and l’s correctly, she will most likely get whatever she wants for the foreseeable future.

Because, for real it is just SOOOO cute.

We went to a Smith’s grocery store near us the other day, and they have carts that are JUST her size, and it was the most adorable thing in the world watching her push her little shopping cart around the store. Seriously, something as simple as grocery shopping (which I do more often than the normal human, probably) was so cute, just because it was small.

BUUUUTTTTTT….. I’m a little bit bitter right now.

You see, the reason I am even able to write this blog post, is because both of my kids are taking a nap AT THE SAME TIME. Like, I can count on two fingers how many times that has happened since Girlfriend was born.

This may sound like a gift to most, but the reason Baby Girl is probably so exhausted is because she spent the last half hour screaming “I HATE YOU!” at the top of her lungs while I took a nice leisurely stroll around the grocery store.

There was lots of flailing and tears involved. Baby Girl cried a little bit, too.

I would feel for the girl if I hadn’t already been numbed by the half hour of her pure hatred.

So I came home, laid her in her bed and busted out her leftover pink ice cream and I’m going to savor every last little bite until it is ALL. GONE.

That’ll show her.

Seriously you guys, this ice cream is INSANE in all the best ways. It is eggless, but still rich and creamy. I’m all about those custard based ice creams, but sometimes you just want pink ice cream, and you want pink ice cream like NOW.

And this gorgeous ice cream definitely fits the bill.

Ingredients

  1. 1 1/2 cups chopped strawberries

  2. 2 tablespoons honey

  3. 1/2 cup granulated sugar

  4. 1 teaspoon lemon juice

  5. 1 1/2 cups heavy whipping cream

  6. 3 teaspoons vanilla

Instructions

  1. Add strawberries, honey, sugar and lemon juice to a large bowl. Mix together and let sit for 15 minutes until the strawberries have released their juices.

  2. Crush the mixture with a fork or pastry blender until there aren't any big pieces of strawberry left. If you want it completely smooth, blend it in a blender or food processor at this step, instead.

  3. Add heavy cream and vanilla to the strawberry mixture and stir just until combined.

  4. Pour the mixture into your ice cream maker and follow the manufacturer's instructions for your specific model.*

  5. Eat the ice cream immediately or freeze in an airtight container for at least 3 hours to make it thicker.
