HOOOOOONNNEEEYYY!! I’m HOOOOOOOMMMMEEE!

Seriously though, guys. I’m back. My newest addition is already TWO MONTHS OLD.

And can I talk about her for a quick second? Girlfriend is the best baby in the ENTIRE HISTORY OF THE LIVING UNIVERSE {knock on wood}. She makes me want to have like 17 more just like her. She is literally perfect. And I mean LITERAL PERFECTION, PEOPLE.

I should actually probably call it quits right here and now and end on a high note but we all know that I won’t.

Can you imagine raising 19 teenage girls? Hopefully the world just ends before that ever happens to me.

Alright… Let’s talk food. More specifically, let’s talk peach tart. I can only make this dessert with big juicy beautiful fresh peaches so I only make it around this time of year. But I seriously make it like once or twice per week during peach season.

It is by far one of my favorite desserts ever. This is a big deal guys… Because we all know how much I LOVE dessert. What’s even weirder though is that I am not usually a fan of cooked peaches. They just get all mushy and weird to me. It’s why I’ve never liked peach pies or cobblers… But THIS. This tart is seriously magical. I love it.

And Baby Girl? She loves to sit on it. Seriously. She sat on my peach tart. Good thing she’s cute.

It’s also a good thing this is SO ridiculously easy to make. Well, this is actually a blessing and a curse. Because, HELLO. PEACH TART(!) but also because hello peach tart, meet my butt.

I have a friend, let’s call her Karin Smith… because that’s what her name is, who claims she absolutely cannot bake anything for the life of her. She had a peach tree bursting with beautiful peaches so I gave her this recipe and BOOM. She made a beautiful peach tart. So easy. I also texted the recipe to my other friend, Karen Smith because seriously? I have two friends with the SAME name.

Warning: If your name is Karen you are destined to marry a dude with the last name Smith. Just so you know.

My self control is powerless against the almighty peach tart. This dessert derives a lot of its sweetness from the fresh peaches. And this crust… It’s like manna from heaven. Plus it’s made with olive oil so it’s basically #fitfam material.

Make this to celebrate the close of an awesome and unforgettable summer. Also, make it before fresh peaches start disappearing since peach season lasts like, 2.4 seconds.

For the Crust

  1. 1 1/2 cups all-purpose flour

  2. 1/2 teaspoon sea salt

  3. 1 teaspoon granulated sugar

  4. 1/2 cup olive oil (I like to use light tasting extra-virgin olive oil)

  5. 2 tablespoons milk

  6. 1/2 teaspoon almond extract

For the Filling

  1. 5 small fresh peaches

  2. 3/4 cup granulated sugar

  3. 2 tablespoons all-purpose flour

  4. 1/4 teaspoon sea salt

  5. 2 tablespoons salted butter, cold and cut into small pieces

For the Crust

  1. Preheat oven to 425° F.

  2. In a medium sized bowl, stir together the flour, salt and sugar. In another small bowl, whisk together oil, milk and almond extract. Pour oil mixture into flour mixture and mix gently with a fork until it comes together in a dough. Pour into an 8 X 8 pan, a tart pan or a regular pie dish (so many options!) and pat down using your fingers making sure to push crust up the sides about 3/4 of an inch.

For the Filling

  1. Cut your peaches into 6-8 slices (I like to cut into four and then cut all four pieces in half) and arrange in rows over crust.

  2. In a medium bowl combine remaining ingredients for filling (sugar, flour, salt and cold butter) and using your fingers, pinch ingredients together until pebbles form. Sprinkle sugar mixture over top of the peaches and bake for 35-45 minutes or until the filling is shiny.

Notes

  1. Serve with freshly whipped cream.
