Parmesan Mushrooms

I feel like there are two people in the world. People who love mushrooms and people who don’t.

I’ve never really met anyone who is like, “Oh, mushrooms? Yeah, they’re aight.”

I swear it’s always one extreme or the other. “I WANT TO MARRY MUSHROOMS,” vs. “MUSHROOMS CAN EAT CRAP AND DIE.”

Well, I want to marry mushrooms. They are the whole package.

Funny, smart and delicious.

That isn’t everyone’s ideal package? Hmm… weird.

Well, THESE shrooms are also healthy and PRETTY! BOOM. The whole package and then some.

This side dish is super fresh and comes together in a snap.

We ate them with some delicious fish (recipe to come) and it was an awesome and healthy dinner.

For my Ketopia friends, this is an excellent side dish to add to your repertoire. Mushrooms are a great source of minerals and have next to zero carbs. You will love this!

​Same goes for all my non-ketopia, yet health conscious friends. You will also love this!

Speaking of health conscious… I went and ran the Dirty Dash a couple of Saturdays ago. I don’t think you guys understand. I am NOT a runner, but running through the mud with my friends was awesome. It was a 10K and I don’t think I’ve run that far at one time since high school.

I was so proud of myself for completing it.

Then Sunday rolled around and I laid in bed and cried and swore I’d never do it again.

A healthy and tasty side dish that comes together in a matter of minutes!

Ingredients

  1. 3 tablespoons butter

  2. 2 packages sliced white button mushrooms

  3. 4 cloves garlic, minced

  4. Seasoned salt and pepper, to taste

  5. 1/4 cup grated parmesan cheese

  6. Fresh parsley, chopped

Instructions

  1. Heat butter in a large skillet over medium/high heat. Add garlic and mushrooms and sauté for 5-7 minutes or until the mushrooms are completely cooked on both sides. Season with seasoned salt and pepper to your preference. Remove from heat and sprinkle with chopped fresh parsley and parmesan cheese. Serve immediately.
