Mandarin Orange Salad

Whenever I get pregnant, the thought of eating sugar makes me feel sick so I apologize for the upcoming lack of dessert recipes around these parts. It kind of made me sad around Thanksgiving and Christmas, when all those yummy treats were abounding, I didn’t want any of them! They only come around once a year, and I was so sick that I didn’t even have a slice of pie on Thanksgiving! Tragedy. Especially because you all know my feels about pie.

Anyway, a lot of people have asked me what I do with all of the food that I make for this blog, and my answer to you is that we eat all of it. Well, I guess it’s not ALWAYS us, but it always gets eaten.

Whether I’m making it for a friend, or for an event, or for dinner that night, nothing goes to waste around these parts.

So, basically, if I’m not feeling the sugar thing, I don’t make the sugar things, and I don’t photograph and share the sugar things.

It’s a sad deal, really.

Don’t you worry. I’m sure I’ll be feeling up to it again real soon, though.

But in the meantime, I’m really feeling the fresh fruits and veggies (of course during the winter!), the cheeses, and the proteins.

And I crave this salad like it’s my job.

Mandarin Orange Salad - This salad so easy and so delicious! I crave it ALL. THE. TIME. Tart cranberries, salty cheese and sweet mandarin oranges come together to make an irresistible pairing. Even my toddler loves it!

The combination of flavors is SO amazing. The freshly grated swiss cheese on top is definitely my fav. Combine that with the tartness of the dried cranberries, the sweetness of the mandarin oranges and the crunch of the almonds. It’s a salad that even Baby Girl can get behind… and she’s two!

The dressing on top is the same dressing that I use on my Strawberry Spinach Salad. It is a red wine and poppy seed vinaigrette and it is DELICIOUS and really easy to whip together. I’ve also had Brianna’s Blush Wine Vinaigrette on top and that’s not bad, but if you want the full experience, you need to make your own salad dressing. You won’t be sad about it.

This is going to feel really good after all the heavy Super Bowl food we all ate yesterday.

I didn’t necessarily care much about who won. I am not emotionally invested in either team, except for the fact that I just love Peyton Manning. Such a class act, and HELLO. Demarcus Ware is my man! I’m glad he finally got a ring, even if it wasn’t with my Cowboys.

Remember when the Cowboys were good?

Yeah, me neither. I’m pretty sure I was like one or two.

For the Salad

  1. 1 head Romaine lettuce, chopped

  2. 3/4 cup swiss cheese, finely grated

  3. 1/2 cup dried cranberries

  4. 1 can mandarin oranges, drained (and chopped in half if desired)

  5. 1/2 cup sliced almonds

For the Red Wine Vinaigrette

  1. 1/4 cup sugar

  2. 1 teaspoon salt

  3. 1/3 cup red wine vinegar

  4. 1 cup olive oil

  5. 1 tablespoon poppy seeds

For the Salad

  1. Toss all ingredients together in a large bowl.

For the Dressing

  1. Combine all ingredients together in a mason jar and shake well until the sugar is dissolved and the mixture is combined.

  2. Store in the refrigerator until ready to use.

Notes

  1. *I have some spinach in my salad because I had a bag that was about to go bad. It also makes it extra nutritious!
