I get all my best recipes from Famous Julie.
You all thought the title of my blog was a cutesy little spin off of a popular phrase…
But it’s actually true. My mom really did teach me how to play with my food. Mr. T thanks his lucky stars every day for that.
Famous Julie dug this recipe out of a Taste of Home magazine a while back.
Boy, does she know how to pick ’em.
Lonestar Chicken Enchiladas

These enchiladas are SO GOOD. They are creamy, and cheesy and so good piled with fresh tomatoes and cilantro!

Ingredients
3 cups shredded chicken
1 (10 oz.) can Rotelle tomatoes
3/4 cup salsa verde
1 (4 oz.) can green chilies
1 (4 oz.) can sliced olives
1 teaspoon cumin
2 1/2 cups heavy cream
3/4 teaspoon salt
12 corn tortillas
2 cups pepper jack cheese
Instructions
To make filling combine chicken, rotelle, salsa verde, green chilies, olives and cumin in a bowl. In a shallow dish, combine cream and salt. Dip corn tortillas in cream, fill with â…“ cup filling, roll and place in greased 9x13.
Pour remaining cream mixture over enchiladas and sprinkle with cheese. Cover with foil and bake at 350° F for 35-40 minutes.
