Coconut Pecan Blondies

Holy crap you guys.




These are the bomb.

They are so soft, perfectly sweet and the glaze over the top is to die for. I could eat it with a spoon.

My good friend and fellow volleyball coach Kristin hit the nail on the head when she said that the glaze on top tasted just like cookie dough.

Yeah. Cookie dough.

You know you want in on this.

These coconut blondies are soft and flavorful, and the glaze spread over top is to DIE for.

For the Blondies

  1. 3 cups packed brown sugar

  2. 1 cup butter, softened

  3. 3 eggs

  4. 3 cups flour

  5. 2 Tablespoons baking powder

  6. 1/2 teaspoon salt

  7. 1 1/2 cups chopped pecans

  8. 1 cup shredded coconut

For the Glaze

  1. 1/2 cup packed brown sugar

  2. 1/3 cup evaporated milk

  3. 1/2 cup butter

  4. 1/8 teaspoon salt

  5. 1 cup powdered sugar

  6. 1/2 teaspoon vanilla

For the Blondies

  1. Preheat oven to 350°.

  2. Combine and beat brown sugar and butter until fluffy. Add eggs and blend well. Sift flour, baking powder, and salt and add to sugar mixture, one cup at a time. Add pecans and coconut and mix. Press into greased cookie sheet and bake for 20 minutes.

Glaze

  1. While the blondies are baking, in a saucepan, combine brown sugar, evaporated milk, butter and salt and bring to a boil. Cool slightly and add powdered sugar and vanilla and beat until smooth. Spread over cooled blondies.
