Good morning!
I love making pancakes in the morning. The only thing better than a pancake for breakfast is a pancake for dinner.
Brinner is alive and well, my friends. I’m sure when Baby #2 gets here that we will be eating our fair share of brinners until I stop drowning.
I don’t know that I’ll ever learn to swim. Maybe doggy paddle… let’s be honest. Everyone keeps telling me that two kids is going to kick my heiny.
I believe them.
That’s why I’m going to eat a lot of these pancakes, build up a soft layer of cushy padding around the ol’ behind and soften the blow a little.
Wait… that’s not going to work?
Oh. Well, I’ll eat all the pancakes anyway.
It was slightly hilarious watching Baby Girl eat these pancakes this morning. She loves pancakes, but apparently she’s not a huge fan of blueberries.
Every time she’d come across one it ended up either on the floor, on her lap, or on her plate.
She’s a picky toddler, so she’ll probably love blueberries tomorrow for all I know.
Syrup covered blueberries are super fun to clean up! Yay for toddlers!
In all honesty, I missed picking up those syrup covered blueberries while I was away from her. I don’t know how she does it, but she makes every day picking up sticky blueberries better than the last.
Probably because the day before that I was picking up smashed up bananas. It feels like picking up boogers. Which I probably picked up the day before that.
Life just keeps getting better and better.
Let’s talk pancakes. These babies are super easy to whip together, and the blueberries add just a little something special that your family is going to love! There is also a little orange zest thrown in there for a fresh kick and a dash of cinnamon to keep things interesting.

Blueberry Buttermilk Pancakes

These pancakes are an easy breakfast, hot off the griddle in a matter of minutes. Your family will thank you!

Ingredients
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons sugar
1/4 teaspoon ground cinnamon
2 cups buttermilk
2 large eggs
1 small orange, zested
1 cup fresh blueberries
Instructions
In a large bowl, mix together flour, baking powder, baking soda, salt, sugar and cinnamon. Set aside.
In a medium bowl, combine buttermilk, eggs and orange zest together. Slowly add wet ingredients to the dry ingredients, mixing until just combined. Lumps are desirable.
Fold in the blueberries and leave the batter to rest for about ten minutes. Heat a large skillet over medium high heat and spray with non-stick cooking spray.
Ladle pancakes onto warm skillet 1/2 cup at a time. Flip when bubbles appear all over the surface of the pancake. Continue to cook until golden brown on both sides. Serve with butter and syrup.
