It’s almost Father’s Day, and you know what that means.
It means that you’ll be waking up early to prepare Dad’s breakfast in bed. That’s what it means.
I know you’re tired though, and the last thing you want to be doing is slaving in the kitchen in the wee hours of the morning.
So I have a quick, easy, healthy and delicious breakfast idea that Dad is going to love.
Pancakes!
Piled high with his favorite fruit (or a variety of fruit) with a dollop of whipped cream, because I mean c’mon. It’s his day. Let him party a little.
Believe it or not these pancakes are actually loaded with good protein to start Dad’s day off just right, and with just a hint of sweetness, they won’t load him down for the rest of the day. They are light, and fluffy and oh so delicious.
If I lived near my Dad, I would make him breakfast in bed all the time because he deserves it, and I might be a teensy eensy itty bitty little bit of a Daddy’s girl…
Okay. A lot of a Daddy’s girl. So father’s day has always been a big deal to me.
If you’ve ever met my dad though, you completely understand why I’m wrapped around his little finger. He is my hero.
So if you’re near your dad, do me a favor and take extra good care of him for all of us that live too far from our own… Starting with making these for him for breakfast!

These healthy pancakes come together in a snap and are a treat that anyone will love!

Ingredients
6 egg whites
1 cup rolled oats, dry
1 cup cottage cheese
2 teaspoons sugar
1 teaspoon cinnamon
1 teaspoon vanilla
Instructions
Put all the ingredients in a blender and blend until smooth to form a batter.
Heat a skillet over medium high heat and pour ¼ cup batter onto hot skillet. Wait for bubbles to appear on the top and the edges to set and then flip. Cook on the other side until done in the center. Serve with fruit and a dollop of whipped cream, or low calorie syrup.
