Wedge Yam Fries

Well this is embarrassing.




Embarrassingly delicious.

A few weeks ago my good friend and basically famous reporter, Emilee asked me to post a recipe for sweet potato fries.

I have a love affair with sweet potato fries, so I was more than happy to oblige and ran to the store for the ingredients.

Only I got the WRONG ingredients. Instead of grabbing sweet potatoes, I grabbed YAMS.

Rookie mistake.

If you know me, you know that I hate to waste anything though, so I rolled with it and the results were delicious.

If you made the same mistake I did and grabbed yams instead of sweet potato fries, no need to worry because these babies are yummy!

Ingredients

  1. 1 large yam

  2. Olive oil

  3. Salt and pepper to taste

Instructions

  1. Preheat the oven to 425° F with a cookie sheet inside of it.

  2. Bring a pot of salted water to a boil. While your water is heating up, wash your yam really well and slice into thick wedges. You want your wedges all about the same size so they all cook evenly. Drop the wedges into the boiling water and boil for 5 minutes. Drain the water off and toss with olive oil. Sprinkle with salt and pepper and place in a single layer on your hot cookie sheet that has been heating in the oven. If the fries sizzle when they hit the pan, that is perfect!

  3. Get them back in the oven as quickly as possible and bake for 45 minutes or until golden brown and crispy. Turn the wedges over once about halfway through the cooking process. Remove from the oven, sprinkle with kosher salt and serve warm!
